Omelette Muffins

Ingredients
8 large Eggs
1/ 8 cup Water
½ cup cooked Lean Meat (choose whichever you prefer) cut into small pieces
2 cups diced Vegetables (recommended -red bell pepper, asparagus, broccoli and onion)
¼ teaspoon Sea Salt
1/ 8 teaspoon Ground Pepper
Coconut Oil or paper muffin liners

Method
Preheat oven to 180*C/350*F.
Grease 8 muffin cups with coconut oil or line with paper baking cups.
Fill any remaining muffin cups with 1 inch of water so they do not scorch while baking.
Beat the eggs in a medium bowl and add meat, vegetables, salt and ground pepper.
Pour the mixture into the muffin cups.
Bake for 18-20 minutes. Serve as desired.

Cooking with Kids ~ Painted Paprika Fish

Painted Paprika Fish

Ingredients:
1 kg Fish Fillets (defrosted/thawed)
3 Tbsp Lemon Juice
2 Tbsp Olive Oil
3 Tsp Smoked Paprika Powder
1 Tsp Dried Thyme
Ground Salt and Black Pepper, to taste

Method:
Preheat the oven to 180*C/350*F/ Gas mark 4
Mix the lemon juice, olive oil, prapika, thyme salt, salt and pepper in a small bowl.
Lay all the fish fillets (we get 6 in a box here) flat in an oven proof dish and paint with the paprika basting sauce.
Bake the fish approximately 10 – 15 minutes or until the meat flakes off the bone when pulled with a fork.

Serve with rice and vegetables of your choice or a fresh salad.

Fifi and I made Mustard Chicken for dinner the other night and she just LOVES helping out in the kitchen. She did most of the work. All I did was measure out all the ingredients and put it in the oven (it was a little to heavy for her).

I recently started subscribing to the Dora Little Cooks Collection for my girls. Yesterday Fifi and I used the recipe from book 1, Banana Muffins. I measured all the ingredients and spooned the batter into the muffin cups, Fifi did all the other work by herself.

Fifi very proud of her little creations. This recipe makes enough for 4 large muffins.

Fifi LOVES helping me when I make dinner. She has been helping me since she was 3 years old. Yesterday, for the first time, I let her use a proper paring knife to cut peppers while I was making dinner last night. She even mixed the sauce for me.

She got this lovely personalised apron for her birthday and I got her the little chef’s hat at the Crazy Store.
